Goat cheese stuffed dates wrapped in bacon

I did these for my family this Thanksgiving and they were a huge hit. I needed something easy but tasty and these definitely fit the bill.

Ingredients

  • 6 ounces creamy goat cheese
  • 24 plump Medjool dates
  • 12 slices thinly sliced bacon, cut in half
  • 1/3 cup honey
  • Salt and pepper to taste

Instructions

Preheat oven to 400 degrees. Line baking sheet with foil or parchment paper.

Start by slicing the dates open and removing the pits. Don't cut all the way through the date. Stuff the date with the goat cheese using a small spoon and gently push the date back together.

Wrap each date with half a strip of bacon and use a toothpick to secure. Add salt and pepper to the honey and drizzle or brush on the dates making sure to coat the bacon so it caramelizes in the oven.

Lay dates seam side down on the baking sheet. Bake for 20 minutes or longer making sure the bacon is crisped up.

Serve hot or room temp. Delicious, simple, beautiful appetizer for any occasion. Enjoy!
